Uncle Jerry's Fried Gator

Undoubtedly the best (and most colorful) cook in the Ergon family is Jerry Walley, Area Sales Manager for Ergon Asphalt & Emulsions and master Cajun chef. One of his classic dishes is Fried Gator, and should you be fortunate enough to get your hands on some good gator meat, Jerry's instructions are pretty simple:

  • Soak gator in milk for one hour
  • Dredge in Zatarains Chick Fry
  • Fry at 310 degrees
